Ruby Mint Cooler

“Ruby” rhubarb and mint cooler

1lb. rhubarb, chopped

1/4 cup fresh mint leaves

1/2 cup sugar (more or less to taste)

Simmer rhubarb in 5 cups of water for 5 – 8 minutes.  Turn off heat and steep mint leaves for another 5 – 8 minutes.  Strain and stir in sugar.  Chill well before serving.
